  Toasted Indian Spices

This blend of spices comes from Bruce Aidells, restaurateur and cookbook author.  It is absolutely unparalleled in creating authentic dishes.

2 tablespoons   coriander seeds
1 tablespoon   cumin seeds
2 teaspoons   fenugreek seeds
3 whole   cloves
1" piece   cinnamon stick (broken up)
2 whole   dried red chiles (stem removed)
3 whole   bay leaves
2 tablespoons   sugar
½ teaspoon   ground cardamom
¼ teaspoon   salt

Heat a non-stick skillet over medium heat.  Add coriander, cumin, fenugreek, cloves, cinnamon, chiles and bay leaves; cook 1 minute or until fragrant, shaking pan constantly.  Place the coriander mixture and all other ingredients into a spice grinder and process until finely ground.
