Smoked Stuffers

5-7 lb Perdue oven stuffer
3 large mesquite chunks
lemon pepper
apple slices

Prepare the smoker for cooking.

Allow the bird to warm before putting in the smoker or you will dramatically increase the cooking time (out of fridge 1 hour). Rinse cavity and sprinkle inside and out with lemon pepper. Stuff bird with apple slices. Tie off legs. Place in the smoker and cook at 200 to 225 degrees. After 6 hours bird should be checked - test with meat thermometer - they usually require about 1 1/2 hours per pound.
