Marry Me Chicken This is the Food Network's version of the Tik-Tok recipe sensation that went viral a few months age, and it really is terrific. Easy to prepare and oh so good. Serve with spaghetti (or rice) for a delicious meal in about a half-hour.
Following the directions on the pasta box cook the pasta until al dente. Drain, set aside and keep warm. Heat 2 tablespoons of the oil in a large skillet over medium heat. Season the chicken on both sides with salt and pepper and gentley lay the chicken breasts in the skillet. Cook on one side, undisturbed, until golden brown, about 5 minutes. Turn the chicken and continue to cook the chicken until golden brown on the other side, about 5 minutes more. Remove to a plate. Add the remaining oil to the pan along with the shallots and cook, stirring occasionally, until just tender, 1 to 2 minutes. Add the garlic and continue cooking until the garlic is aromatic, about 1 additional minute. Add the broth and scrape up any fond stuck to the bottom. Add the tomatoes, bullion, heavy cream, oregano, chile flakes and ½ teaspoon salt and stir until combined and the bullion is dissolved. Bring to a boil then reduce to a simmer. Nestle the chicken breasts
into the sauce. Cook until the sauce has thickened slightly and the
chicken is cooked through (registering 165 degrees F), 5 to 10 minutes.
Stir in the basil and he Parmesan. Serve with the spaghetti. Notes:
