Title: Warm Bacon Vinaigrette

  Scott works more from experience than from recipes and that is reflected here with his instruction to "keep adding oil until the proper thickness is obtained."  So even though you may need to play around with this one a bit when you finally serve this up with your favorite salad and fresh, crusty bread you won't want anything else for dinner!
  • ½ pound bacon, finely diced
  • ¾ cup dijon mustard
  • ½ cup white vinager
  • ¼ cup crushed garlic
  • ½ cup white wine
  • olive oil
  • salt pepper to taste

Cook the bacon until it has rendered it's fat but hasn't yet become crispy.  Add the mustard, vinegar and garlic and stir until it return to a simmer.  Add the wine and then, while whisking, keep adding oil in a slow, steady stream until the proper thickness is obtained.  Salt and pepper to taste and add some chopped fresh parsley for garnish.
