Title: Turkey and Black Bean Chili

  • 1 Tablespoon vegetable oil
  • 1 onion -- chopped
  • 3 cloves garlic -- minced
  • 2 red bell pepper -- finely diced
  • 1 1/2 pounds ground turkey -- breast, coarse grind
  • 2 Tablespoons flour
  • 3 Tablespoons chili powder
  • 2 Tablespoons ground cumin
  • 2 teaspoons cocoa powder
  • 1 teaspoon cayenne pepper
  • 1/4 cup tarragon vinegar
  • 2 Tablespoons brewed coffee -- strong
  • 28 ounces plum tomato, crushed
  • 1/4 teaspoon salt
  • 2 cups cooked black beans

    Heat the oil over medium-high heat in a Dutch oven or deep skillet. Add the onion, garlic,and bell peppers; saute, stirring frequently, for 5 minutes. Add the ground turkey and saute for 5 minutes, stirring constantly and breaking up any lumps with the spoon.

    Sitr in the flour, chili powder, cumin, and cocoa. Stir over low heat, stirring frequently, for 3 minutes to cook the spices. add the remaining ingredients except the black beans and bring to a boil over medium heat. Simmer the chili, stirring occasionally for 40-45 minutes, until thick and the turkey is tender. Add the black beans and cook for 5 additional minutes.

    NOTES : Per serving: 302 calories, 70 mg cholesterol, 6 g fat, 456 mg sodium.  Freezes well.  I like to add another 2 cups of beans, this adds about 60 calories per serving.  Serve with chopped cilantro, lime wedges, and lofat sour cream or yogurt.
