Title: Turkey Chop Suey

  • 2 tablespoons cornstarch
  • 1½ cups chicken broth
  • 2 tablespoons soy sauce
  • 1 cup celery cut on slants in 1/2 inch pieces
  • ½ cup sliced onions
  • ½ cup sliced mushrooms
  • 2 cups of bean sprouts (drained if you use the canned ones)
  • 2 cups diced, cooked turkey

Combine cornstarch, broth, and soy sauce in saucepan and mix until smooth. Add celery, onions, and mushrooms to mixture. Bring to a boil. Reduce heat and simmer stirring frequently, for 20 minutes. Add bean sprouts and simmer 5 more minutes. Add turkey, reheat to serving temperature. Serve over rice using 1 cup per serving.

Serves about 6 people.

This recipe was adapted from 1 I found in a cookbook a few years ago. It is very good. You can use chicken, beef, or pork also.
