Title: Malaysian Eggs in Soy Sauce

  Here's a great easy appetizer if you're going to serve a leafy salad with your dinner, serve this with the salad or just before.
  • 4 eggs
  • 1/4 c. soy sauce
  • 1 tsp. sugar
  • 1 tsp. oil
  • 1/4 c. water

Boil the eggs for 6 minutes, let stand in cold water until cool then carefully peel.

Mix the soy sauce, sugar, oil, and water in a small saucepan, add the eggs and simmer 6 minutes. Take from the heat and let stand until cold, turning the eggs from time to time so they color evenly.
Leave the eggs in the soy sauce mixture until ready to serve, then drain them, discard sauce and cut in quarters. Place on a platter lined with dark leafy greens.
